Mediterranean salad with bulgur
Serves 4

• 100 g bulgur
• 200 ml hot water or vegetable stock
• 50 ml extra virgin olive oil
• 25 ml balsamic vinegar
• 2 tablespoons fresh lemon juice
• 2 cloves garlic, finely chopped or pressed
• 15 g cumin, crushed
• 200 g Feta cheese, finely diced
• 10 g ground red pepper
• 10 g dried oregano
• Salt and freshly ground black pepper to taste
• 100 g cucumber, diced
• 100 g red pepper, diced
• 100 g grated carrot
• 1 bunch parsley or coriander, finely chopped
• 50 g red onion or fresh finely chopped onion
• 50 g black olives
• 50 g almonds or walnuts, finely chopped (optional)
• Fresh lemon slices for garnish (optional)

Preparation:
Preparing the bulgur:
- Rinse the bulgur in cold water and place in a saucepan.
- Heat 200 ml of water or vegetable stock.
- Pour the hot liquid over the bulgur, cover and leave to stand for 20-25 minutes, or until it is soft and has absorbed the liquid.
Preparing the dressing:
- In a small bowl, mix the olive oil with fresh lemon juice, crushed garlic, crushed cumin, ground paprika, oregano, salt and black pepper.
Preparing the salad:
- Once the bulgur is soft and has cooled slightly, transfer it to a larger bowl.
- Add diced cucumber, chopped red pepper, grated carrot, finely chopped parsley or coriander, chopped onion, black olives and chopped cheese.
- Pour dressing – mix thoroughly so that the dressing is evenly distributed throughout the salad.
Serving:
- When serving, you can sprinkle with almonds or chopped nuts, if desired,
- Garnish with fresh lemon slices.
- Serve fresh, preferably cold.
Tips:
- The cooking time of the bulgur may vary slightly. It is important that it softens and absorbs all the liquids.
- Serve the salad fresh so that the vegetables remain crunchy and the flavors combine properly.
This Mediterranean Bulgur Salad is a light dish that is quite filling. It can be served on its own or as a side dish.
