Baked bulgur pudding with fruit

• 100 g fine bulgur
• 100 ml milk (or plant-based)
• 25 g sugar / sweetener
• 1 vanilla sugar
• 2 eggs
• 25 g raisins or dried fruit
• 150 g apple (peeled, diced)
• Butter / oil for greasing the mold
• Powdered sugar, fresh fruit for serving (optional)
Preparation: 
  1. Preheat the oven to 180°C (160°C for fan-forced baking) and prepare a medium-sized baking dish, which you can grease with butter or oil.
  2. In a medium saucepan, combine the bulgur and milk. Bring to the boil, then reduce the heat to low and simmer for another 10–12 minutes, until the bulgur is tender and the milk has been absorbed. Make sure the mixture is neither too thin nor too dry.
  3. When the bulgur is cooked, remove from the heat and let it cool slightly.
  4. Add the sugar or sweetener, vanilla sugar, beaten eggs, raisins or dried fruit and apple cubes. Mix everything thoroughly to distribute the ingredients evenly.
  5. Grease the baking dish with butter or oil and pour the bulgur-fruit mixture into it.
  6. Bake in the oven for 25–30 minutes, until the top is golden brown and the center is no longer runny. Check occasionally to make sure the top is not burning.
  7. Once baked, remove the casserole from the oven and let it cool in the pan for a while.
  8. When serving, you can sprinkle with powdered sugar and add fresh fruit (optional).
  9. Serve warm, plain or garnished with fresh fruit.
